- Angie, here's my secret... brine with sugar, salt, water overnight to tenderize. I like to brake down whole chickens for freshness and accuracy of what I want. Make a seasoned flour, 75% ap unbleached, 25% cornstarch, add 4 tablespoons baking powder, and then season to taste with cayenne, old bay, lawrys, fresh ground pepper, and garlic powder. Room temp chicken goes to seasoned flour, then 1 cup seasoned flour, one egg, and 1 cup water (wet mix) then to the seasoned flour again.. ready to fry
