This Spicy Fried Chicken Sandwich Is Like Wing Night Between Two Buns

  2. Place the chicken and buttermilk into a freezer bag. Seal the bag, and give it a shake to mix. Chill in the fridge overnight.
  3. Preheat the oven to 350 degrees F.
  4. Line a baking sheet with parchment paper and arrange the bacon on it in a single layer. Coat bacon with maple syrup. Bake, turning halfway through, for 25 to 30 minutes, or until deeply golden brown. Transfer to a rack to cool.
  5. Next, get that chicken frying. Heat 3-inches of canola oil in a deep, heavy-bottomed Dutch oven to 350 degrees F. Combine the flour, spices, salt and pepper in a bowl. Working in batches, dredge the chicken in the flour mixture so each piece completely coated. Fry for 6 to 8 minutes, or until the juices run clear and the chicken is a crispy piece of pure heaven.
  6. Meanwhile, melt the butter in a small saucepan. When melted, whisk in the hot sauce until smooth. Toss each cooked piece of chicken in the hot sauce mixture, just before building the burgers.
  7. Build each burger with 1 or 2 tablespoons of mayo, a piece fried chicken, 2 slices of bacon, some pickles, a slice of tomato and lettuce.
