Ingredients

  • 2 ounces blood orange juice
  • 1/2 ounce gin
  • 1 teaspoon lemon-thyme simple syrup*
  • 4 ounces Pellegrino

Instructions

  1. Lemon-thyme simple syrup: bring 1/2 cup sugar, 1/2 cup water and 2 sprigs lemon-thyme to a low simmer. Stir until sugar dissolves. Allow to cool.
  2. Pour blood orange juice, gin and simple syrup over ice in a Collins glass, top with Pellegrino and stir. Garnish with a sprig of lemon-thyme.
