Pisco Punch with Grilled Lemons

Ingredients

  • 4 lemons, halved
  • 2 cups Pisco
  • ½ cup simple syrup (click for recipe)
  • 1 cup pineapple juice
  • 1 cup club soda

Instructions

  1. Prepare grill for medium heat. Grill lemon halves, cut-side down, until lightly charred, about 2 minutes; let cool.
  2. Squeeze grilled lemons into a large pitcher and add halves; add Pisco, simple syrup, and pineapple juice. Chill 1 hour. Strain into ice-filled rocks glasses, and top with club soda, about 1 oz. per glass.
