Peach and Tomato Caprese Salad

Ingredients
- 1/2 cup white balsamic vinegar
- 1 clove garlic, minced
- 3 tbsp brown sugar
- 3 tbsp olive oil
dash of salt
- 2 large peaches, cut into 1 inch pieces
- 4 tbsp chopped fresh basil
- 2 lbs heirloom tomatoes cut into 1 inch pieces (remove seeds if guts are plentiful)
- 6 oz fresh mozzarella cut into 1 inch pieces
- fine sea salt & freshly ground black pepper for serving
Instructions
- Whisk together the first 5 ingredients to make the dressing.
- Stir fresh peach, tomato and the basil together with the dressing.
- Carefully mix in mozzarella.
- Sprinkle with fine sea salt & freshly ground pepper to taste.
