Peach and Tomato Caprese Salad

Ingredients

  • 1/2 cup white balsamic vinegar
  • 1 clove garlic, minced
  • 3 tbsp brown sugar
  • 3 tbsp olive oil

dash of salt

  • 2 large peaches, cut into 1 inch pieces
  • 4 tbsp chopped fresh basil
  • 2 lbs heirloom tomatoes cut into 1 inch pieces (remove seeds if guts are plentiful)
  • 6 oz fresh mozzarella cut into 1 inch pieces
  • fine sea salt & freshly ground black pepper for serving

Instructions

  1. Whisk together the first 5 ingredients to make the dressing.
  2. Stir fresh peach, tomato and the basil together with the dressing.
  3. Carefully mix in mozzarella.
  4. Sprinkle with fine sea salt & freshly ground pepper to taste.
