Ingredients

noodles

  • 8 ounces dry wide and flat rice noodles

sauce

  • 2 tablespoons dark soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 2 teaspoons white vinegar
  • 1 ½ teaspoons sugar
  • 1 minced garlic clove

pinch salt

pork

  • 3/4 pound sliced pork shoulder
  • 2 teaspoons mirin
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon minced ginger
  • 2 tablespoons vegetable oil
  • 2 large eggs, lightly beaten
  • ½ pound Chinese broccoli, cut into 1 1/2" pieces
  • 1 green onion, thinly sliced

salt and white pepper to taste

Instructions

SAUCE

  1. Combine all sauce ingredients and whisk together.
  2. PORK
  3. Combine all pork ingredients and stir together until pork is evenly coated. Set aside and allow pork to marinate.
  4. NOODLES
  5. Fill a pot with water, place over high heat and bring to a boil. Add noodles and boil until soft. Drain and rinse in cold water. Set aside.
  6. ASSEMBLY
  7. Place a large skillet over medium-high heat and add some oil. Add pork and sear on each side.
  8. Transfer pork pieces to a plate and set aside.
  9. Add more oil to skillet, pour in beaten eggs and scramble until eggs have just cooked through.
  10. Transfer eggs to plate with pork. Set aside.
  11. Add remaining oil to skillet and sauté broccoli stems. Season with salt and white pepper.
  12. Add pork and continue to cook.
  13. Add broccoli leaves and noodles and toss together.
  14. Pour sauce over noodle mixture and toss together until everything is well coated. Raise to high heat and continue to cook, constantly stirring/tossing, to caramelize the noodles.
  15. Gently fold egg into the skillet.
  16. Top with sliced green onions and serve.

  25. Transfer pork pieces to a plate and set aside.
  26. Add 1 tablespoon oil to skillet, pour in beaten eggs and scramble until eggs have just cooked through, 2 minutes.
  27. Transfer eggs to plate with pork. Set aside.
  28. Add remaining oil to skillet and sauté broccoli stems, about 2 minutes. Season with salt and white pepper.
  29. Add pork and continue to cook for an additional 2 to 3 minutes.
  30. Add broccoli leaves and noodles and toss together.
  31. Pour sauce over noodle mixture and toss together until everything is well coated. Raise to high heat and continue to cook, constantly stirring/tossing, to caramelize the noodles, about 2 minutes.
  32. Gently fold egg into the skillet.
  33. Top with sliced green onions and serve.
