Maple Lemon Peach Cobbler

Maple Lemon Peach Cobbler

Serves8 – 10 servings

Ingredients

Topping Action

  • 1 cup all-purpose flour
  • cup packed dark brown sugar

Zest of 1 lemon

  • ½ teaspoon sea salt
  • ½ cup (1 stick) chilled unsalted butter, cubed

Cobbler Filling

  • 2 tablespoons unsalted butter
  • 2 ¼ pound peaches, cut into ½-inch wedges (7 or 8 peaches will do the trick)
  • ½ cup packed dark brown sugar
  • ¼ cup pure maple syrup
  • 3 tablespoons lemon juice
  • ¼ teaspoon ground cinnamon, plus more for sprinkling
  • ½ teaspoon sea salt

Fresh mint, to garnish

Vanilla Ice Cream, to serve

Instructions

  1. When ready to cook, start the Traeger according to grill instructions. Set the temperature to 350 degrees F and preheat, lid closed, for 10 – 15 minutes.
  2. Topping time! In a medium bowl, combine the flour, sugar, lemon zest, and salt, and mix. Rub the butter with your fingers until large clumps form & there’s no dry flour remaining. Be careful to not overwork the topping. Awesome.
  3. Filling time! Grease a large skillet generously with butter. In a large bowl, combine the peaches, brown sugar, maple syrup, lemon juice, cinnamon, and salt, and toss to mix well. Pour the peach mixture into the prepared skillet, then scatter the topping on top of the peaches in a single layer.
  4. Bake for 30 – 35 minutes, until the crumble is golden brown and the peaches are bubbling and softened. Serve with vanilla ice cream, because, delicious.
