If You Like a French 75, You’ll Love the Air Mail

  1. How to make an Air Mail cocktail:
  2. Stick some cocktail coupes in the freezer or fridge to chill. Combine 2 parts honey with 1 part warm water in an airtight jar with a lid. Shake until combined. Use immediately or transfer to the fridge for up to 2 weeks. (Besides the Air Mail, you can use this in other cocktails like a Bee’s Knees or Penicillin, or just a cup of tea.)
  3. Combine 2 parts white rum, 1 part fresh lime juice, and 1 part honey syrup in a cocktail shaker. Add ice and shake for 20 seconds. Strain into the chilled cocktail coupes and top each with sparkling wine. Garnish each glass with a lime wheel.
  4. (For example, for one cocktail, you’d need 1 oz. white rum, ½ oz. lime juice, ½ oz. honey syrup, and about 1 oz. sparkling wine.)
