Honey Glazed Roasted Carrots

Ingredients
- 1½ pounds tri-color carrots
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons honey
- ¼ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
Instructions
- Preheat oven to 450º. Toss the carrots in olive oil until evenly coated then toss with the honey. Spread in a single layer on an aluminum foil-lined baking sheet. Season with salt and pepper and roast until tender and golden brown, about 30 minutes.
