Honey Glazed Roasted Carrots

Ingredients

  • pounds tri-color carrots
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons honey
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Preheat oven to 450º. Toss the carrots in olive oil until evenly coated then toss with the honey. Spread in a single layer on an aluminum foil-lined baking sheet. Season with salt and pepper and roast until tender and golden brown, about 30 minutes.
