Cheesy Chicken Gnocchi Skillet

Ingredients

  • 1 tbsp olive oil
  • 1.1 pound ground chicken
  • 1 yellow onion - diced
  • 2 garlic cloves - minced
  • ¾ cup sun-dried tomatoes - packed in oil, drained and chopped
  • ½ tsp salt
  • 1 tsp coarsely ground black pepper
  • 1 tsp sweet paprika
  • ½ tsp chili flakes
  • 1 ½ cups chicken broth
  • 2 pounds gnocchi
  • ½ cup cheddar - grated

Instructions

  1. Heat the oil over medium-high heat in a large, heavy-bottomed skillet. Add the ground chicken, break it up into small pieces, and cook until nicely browned.
  2. While the chicken cooks, dice the onion and mince the garlic. Add both to the skillet and cook for about 2 minutes, until fragrant and softened. Roughly chop the sun-dried tomatoes and add them to the pan, along with salt, pepper, paprika, and chili flakes. Stir to combine.
  3. Pour in the chicken broth and add the gnocchi. Give everything a good stir so the gnocchi are submerged. Bring to a boil, then reduce the heat and simmer for about 3 minutes, until the gnocchi are tender and the sauce thickens slightly.
  4. Turn off the heat and stir in the cheddar until melted and creamy. Serve right away and enjoy.
