Carnitas Breakfast Hash

The best use for leftover carnitas is not another taco. It is this. Crisp the pork with some peppers, slide a couple of runny eggs on top, and you have a breakfast that eats like a diner plate but comes together in one pan. This is where the second pouch earns its keep on a quiet morning.

Steps

  1. Heat the oil in a skillet over medium-high. Add the peppers and cook until soft and lightly charred, about 4 minutes.
  2. Pull the carnitas into smaller bite-size pieces first, since the pouch hunks are big. Add it to the pan, press it down, and let it sit undisturbed for 3 minutes so it crisps before you toss it with the peppers.
  3. Push the hash to one side of the pan. Crack in the eggs and fry them to your liking, sunny side up is the move here so the yolk becomes the sauce.
  4. Slide it all onto a plate, season the eggs, and hit it with hot sauce or salsa. Fold it into a warm tortilla if you want it handheld.

Notes

  • Runny yolk is the sauceDo not overcook the eggs. When you break the yolk it coats the crispy pork and peppers and pulls the whole plate together. No ketchup required.
