Banana Pancakes with Berries and Coconut Bacon
Serves8 large pancakes
Ingredients
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- ¼ teaspoon cinnamon
- 1 pinch kosher salt
- 1 large egg
- ¾ cup almond milk
- 1 tablespoon maple syrup, plus additional for serving
- 1 teaspoon vanilla extract
- 1 ripe banana
Butter
Coconut bacon, for serving
Seasonal (or frozen) berries, for serving
Instructions
- 1. Make the coconut bacon.
- 2. Combine 1 cup whole wheat flour, 1 teaspoon baking powder, ¼ teaspoon cinnamon, and 1 pinch kosher salt.
- 3. In a separate bowl, whisk 1 egg, then pour in ¾ cup almond milk, 1 tablespoon maple syrup, and 1 teaspoon vanilla extract. In a small bowl, mash 1 banana.
- 4. Stir the wet ingredients and banana into the dry ingredients.
- 5. Lightly butter a skillet and wipe off extra grease with a paper towel. Heat the skillet to medium heat. Pour the batter into small circles and fry the pancakes until the bubbles pop on the top. Then flip them and cook until done.
- 6. Serve topped with coconut bacon, berries, and maple syrup.
