15 Minute Kake Soba (Japanese Noodle Soup)

Ingredients
- 1 ½ cups dashi
- 1 TB mirin
- 1 TB soy sauce
- 1 TB sesame oil
- 1 tsp honey or sugar
- 3 ½ oz dried soba (buckwheat) noodles
- 1 scallion, finely chopped
Toasted sesame seeds (garnish - optional)
Instructions
- 1. Cook the noodles according to package instructions. Rinse under cold water to stop carryover cooking and toss them in 1 TB sesame oil to keep them from sticking together.
- 2. Combine the dashi, soy sauce, mirin and honey in the sauce pan. Bring to a boil, then reduce heat immediately to a simmer. Simmer for a few minutes, until the honey has dissolved into the stock.
- 3. Pour the piping hot dashi broth over the noodles. Garnish with scallion and toasted sesame seeds. Stir before slurping.
