15 Minute Kake Soba (Japanese Noodle Soup)

Serves1 ninja

Ingredients

  • 1 ½ cups dashi
  • 1 TB mirin
  • 1 TB soy sauce
  • 1 TB sesame oil
  • 1 tsp honey or sugar
  • 3 ½ oz dried soba (buckwheat) noodles
  • 1 scallion, finely chopped

Toasted sesame seeds (garnish - optional)

Instructions

  1. 1. Cook the noodles according to package instructions. Rinse under cold water to stop carryover cooking and toss them in 1 TB sesame oil to keep them from sticking together.
  2. 2. Combine the dashi, soy sauce, mirin and honey in the sauce pan. Bring to a boil, then reduce heat immediately to a simmer. Simmer for a few minutes, until the honey has dissolved into the stock.
  3. 3. Pour the piping hot dashi broth over the noodles. Garnish with scallion and toasted sesame seeds. Stir before slurping.
  4. 4. Enjoy!
